Why are my dumplings gooey in chicken and dumplings?
Yes, lards and fats can make the dumplings gooey and doughy. With this being said, you should replace the lard with butter or soft margarine. This replacement will promise the puffed-up dumplings and the perfect dough texture. When you have to knead the dumpling dough, you need to mix everything thoroughly.
How do you tell when dumplings are done boiling?
Bring the water back to a boil and as soon as they start floating to the top, add another cup of cold water. Again, when they start to float they should be done. Taste and if not done, add some more cold water and wait until they float again. When they are done, strain and serve with your favorite dumpling sauce.
How long to cook dumplings after they float?
They should be done when they start floating, but if they're not, simply boil them for another 2 to 3 minutes.
How do you know if steamed dumplings are cooked?
If you need a way to test if your dumplings are done, run a toothpick through one. If it comes out clean, your healthy dumplings are ready to be eaten!

Otherwise, the dumplings will stick together into a large clump. Then, I stick the baking sheet straight into the freezer. After several hours, the outsides of the dumplings will harden.
