In regard to hash browns in particular, i find it helpful to soak them in water for 5-10 minutes after they're all cut up and pat them dry before they go in the pan. This rinses excess starch from the hash browns that can burn and cause stuff to stick. Also, hash browns will soak up quite a bit of butter/oil.
