How is pickling vinegar made?
Vinegar pickling (or quick pickling) is a simple process. Water, salt and vinegar (and sometimes sugar) are combined and heated and then fruit or vegetables are immersed in that liquid. However, there is a lot of variation within those ingredients that needs to be taken into account.

- Give your jars a wash in hot soapy water or run them through the dishwasher without any cleaning liquid.
- Put them into the oven at 110°C (230°F).

You can reuse old jars, just make sure you wash them thoroughly in hot soapy water and then heat them in the oven to about 150 degrees to sterilise them before you put the jam in (you always put jam into hot jars anyway so do this last).
