Can you use pecans or almonds in pesto?
I prefer the taste of pecans over the pine nuts usually called for in pesto recipes. I developed this recipe over a summer of trial and error and prefer it to all other pesto recipes!
What can I use in pesto instead of Parmesan?
Just replace the parmesan with extra nuts when making your pesto. My favourite is cashews but almonds or walnuts or Brazil nuts work well (and a are less expensive than pine nuts)! Or see my complete Sicilian Nut Pesto recipe.
