Don't over-cook the pasta There is little worse than mushy, over-cooked pasta in soup. To ensure you get it just right, make sure the soup is nearly cooked before adding the pasta. Smaller pasta shapes soak up broth readily so ensure you serve the soup as soon as it's cooked.
How do you keep noodles from getting mushy in soup?
I always keep the noodles and soup separate. Put as much noodles you want into a bowl and then pour in the soup. Homemade noodles never turn to mush. I use my mom's recipe of flour, egg, water and a dash of salt, roll the dough flat and let it dry, then parboil them for only about 10 minutes before tossing in the soup.
How do you keep noodles from soaking up soup?
One idea is to make the broth dry or very concentrated (chop the veg up really small), adding the dry noodles and then the boiling water from a kettle at work. Another is to make the broth as a liquid, keep the dry noodles separate and warm it up in the microwave before adding the dry noddles.

As the pasta absorbs water, it leaves less and less free water in the pot, so whatever small amount of gelatin and other dissolved solids were present in the water in the first place will become a little more concentrated (those solids go mostly unabsorbed by the pasta).

In a 6- to 8-quart pan over high heat, bring 3 to 4 quarts water to a boil. Add rice noodles and stir to separate; cook until barely tender to bite, 2 to 3 minutes. Drain. If not using immediately, rinse well to keep noodles from sticking together, and drain again.
How do you prepare rice noodles?

- Boil a pot of water.
- Turn off the heat.
- Add rice noodles to the pot, or pour the boiling hot water over the noodles in a wide bowl, covering the noodles completely.
- Swish the noodles around briefly to separate.
- Soak the noodles for 6 to 10 minutes* until tender but still slightly firm and chewy.
Are rice noodles supposed to be chewy?
Place the noodles in a large bowl or pot. Note that fresh rice noodles are soft, but most rice noodles are sold in their hard, brittle form. Fresh rice noodles do not need to be cooked or soaked in water.
