Where does horchata come from?
It originated at least as far back as 13th-century Valencia, where it is known as orxata de xufa. In Spain it is made with soaked, ground, and sweetened tiger nuts, but in Mexico and other parts of the Americas the base is white rice.
Who created the horchata?
A popular legend proclaims that King James I of Spain coined the word horchata, when a young peasant girl served it to him on a hot 13th-century day. After taking his first refreshing sip, Aragon exclaimed in Valencian dialect, “Aixó es or, xata!” (This is gold, pretty girl!)
