What causes banana bread to not cook in the middle?

How do you know when banana bread is ready?
The top and sides will be a caramel, dark brown, with a yellow bread color in the center, but check it with a toothpick to be sure it's done. Insert a toothpick into the middle to check if it comes out clean. If it's clean, or there are only a few crumbs, it's ready to pull out.
How do you make things bake in the middle?
The most practical tip that will likely work for you is to cover the cake with some aluminum foil and let it keep baking in the middle. Simply going a little longer is often going to be enough to turn things around and get you the results that you need.
What temp should you cook muffins?
Preheat the oven to 400°F. Line a standard muffin tin with paper liners or coat with nonstick cooking spray (or both).
Can I use bread flour to bake muffins?
Something made by the muffin method (combine wet, combine dry, mix just enough to combine) will probably be OK made with bread flour, because you aren't working the batter enough to active the gluten. So, muffins, pancakes, soda breads, cookies, all doable, if you have a delicate hand.
