Back then, cheese quesadillas were often a (gasp!) microwaved affair, but these days we prefer them baked. The cheese gets perfectly molten in the oven, and there's just no substitute.
What cheese do you use for quesadillas?
Shredded cheese – Using Mexican cheese will make your quesadillas taste the best. Oaxaca and Chihuahua cheese are ideal because they melt easily and have a luxurious stretch. If you can't find them near you, I recommend using a combination of mozzarella and Monterey Jack.

If you are feeding a large group, keep the quesadillas warm in a 300-degree oven on a baking sheet until ready to serve. You will need slightly more oil if you are using corn tortillas, as they absorb a bit more than the flour variety.

Preheat your oven to 350°F. In general, you should set it up to anything from medium to medium-high heat but 350°F appears to be the most optimal temperature. Place the quesadilla directly on the oven rack as long as it is clean or in an oven-safe dish.

Prepare From Frozen: Method 1: Thaw overnight in the refrigerator and cook according to instructions. Method 2: Either wrap frozen quesadilla in a moist paper towel and microwave for 30-60 seconds OR let thaw in refrigerator and warm up on sheet pan in the oven at 350 degrees F for about 5 minutes.
How do you cook El Monterey Quesadillas in the oven?
OVEN:
- Preheat oven to 375°F (190°C).
- Place pieces on baking sheet and position in centre of oven.
- Cook 6 to 7 minutes per side, or until the tortilla shells are light golden brown and product is thoroughly heated,
- Let stand 2 to 3 minutes before portioning.
- Serve.
Can you freeze quesadilla wraps?
When stored properly in the freezer, tortillas can last for up to 6-8 months. As with any frozen food, it's important to make sure that they're stored correctly in an airtight container such as a zip-top bag.
