The netting (or string) holds the lamb together in that nice shape. Do not remove it until after the lamb is roasted.
Do I cut the string off the roast before cooking?
If your meat comes in a plastic net bag, you must remove those prior to cooking it. By the time you get it home you can't tell that. If you are just making a pot roast that will fall apart anyway you can take it off, but if you are hoping to "carve" the roast in front of guests you want to cook it in the bag.

You need a baking dish just a bit larger than the joint. Throw in some vegetables such as carrots and onions to bring the joint up higher in the pan. Don't lay the pork skin side down or it will never go crispy. Remove all packaging (if any) from the pork joint but leave the string on.
