How do you cook dried beans quickly?
Quick Soak. This is the fastest method. In a large pot, add 6 cups of water for each pound (2 cups) of dry beans. Heat to boiling; boil for 2–3 minutes. Remove from heat, cover and soak for at least 1 hour.
Can you use kidney bean water?
Red kidney beans are poisonous if not boiled furiously for 20 mins during their initial cooking. The secret is never, ever to cook them in the water in which they have been soaked but to drain and then rinse them well before putting into fresh water. The soaking water absorbs much of the ingredient that upsets the gut.
Do you cook beans in the same water you soak them in?
It's common practice to cook beans in the same water they're soaked in (if they're soaked at all), says Lynne Bigwood, a home economist for the Northarvest Bean Growers Association, and it is particularly important to do so if you are cooking black beans.
What is the advantage of using canned beans over dried?
Answer: You can rinse canned beans and then heat them in clear water to reduce their sodium, but that still only reduces the sodium content by one third. On the other hand, cooking dried beans allows you to control the amount of salt you put in the pot and therefore the amount of sodium you're taking in.
