Can frozen chicken broth go bad?
While chicken broth will technically stay safe to eat indefinitely in the freezer, it will eventually begin to degrade in quality. The broth can develop strange flavors over time. For the best quality, chicken broth should be frozen for six months.

Why is my chicken broth dark?
In particular, a chicken stock is not necessarily very much lighter in color than a beef stock. Most of us think of beef stocks as having a much darker color than chicken stocks, but that is primarily due to the coloring added to canned beef stocks, and sometimes also to a bit of tomato cooked into beef stock.
What color should homemade chicken broth be?
Stock is made mostly with chicken bones that have some meat attached, but broth is made with mostly the meat. Stock has a much more complex flavor and is clear and yellow or golden in color, whereas broth is weaker in flavor and lacks color -- sometimes it's even cloudy. Don't salt your stock.
How do you make gelatinous stock?
DO skim scum and fat from the simmering stock every 15-30 minutes for the first hour. For the next few hours the stock can be skimmed once every hour. After that point the stock can be left alone to simmer for a total of 18-24 hours for chicken or veal stock and 24-48 hours for beef stock.
