Can I use flour in meatballs instead of breadcrumbs?
I would use potato or almond flour between those options. Instant mashed potato flakes work best in that kind of category. I've seen meatloaf and meatball recipes that use oats instead of breadcrumbs. Don't use flour, though!
Why do people add egg to meatballs?
Eggs are not a source of moisture! They're in the meatball mix to bind the meat, breadcrumbs, cheese, and herbs. The eggs will cook and make the meatballs dense and spongy--you want light, airy meatballs. For one to two pounds of meat, you usually won't need more than one or two eggs.
Why are my meatballs so tough?
If meatballs are packed too tightly and compactly, they'll turn out tough, rubbery, and chewy. Oil your hands so that the mixture won't stick to them and gently and quickly form the meatballs.
Why are bread crumbs used in meatballs?
Here, we're soaking breadcrumbs in a little milk until the bread becomes soggy, then mixing that right into the meat. This binder (aka panade) helps add moisture to the meatballs and also prevents the meat proteins from shrinking and becoming tough.
