What is la rouille?
Rouille (pronounced [ʁuj], French 'rust') is a sauce that consists of olive oil with breadcrumbs, garlic, saffron and cayenne pepper. It is served as a garnish with fish, fish soup and, notably, bouillabaisse. Rouille is most often used in the cuisine of Provence.
How long does rouille last?
Once finished, pot and pop it in the fridge where it will keep for about 4-5 days.
What Colour is rouille?
Rouille is a Provençal sauce made from red chillis, garlic, olive oil, and breadcrumbs or potatoes, and served with bouillabaisse or other local fish dishes. The chillis give it a brownish-red colour, whence its name (French rouille means literally 'rust').
Can you freeze rouille?
Keep the soup chilled for up to 48 hours or freeze for up to 1 month. Heat to simmering to serve. The rouille will keep in the fridge for 5 days.
