What is vegan meringue made of?
These meringues are made from the leftover liquid from a can of chickpeas, whipped and baked up much like their namesake cousins, but made for vegans. It's not quite magic — it's thanks to the starchy science of aquafaba.

What should a meringue be like inside?
Meringue should be on the sweet side, with a crisp texture that will instantly melt in your mouth. After being given plenty of time to slowly bake, finished meringue will be white, shiny, and smooth.
How do you harden meringues?
Spoon meringue onto circle. Spread with a spoon, forming a shell and making side higher than centre. Bake until firm, about 1-1/4 hours. Turn oven off; leave meringue in oven for 4 hours with door closed.
What is a soft meringue?
Soft meringue should be beaten until it appears glossy and stands in soft peaks that curl at the tips when the beater or whisk is lifted. If the peaks stand straight and tall (stiff peaks), the meringue has been overbeaten. Sugars: Soft meringue usually has a ratio of 2 Tbsp. sugar per egg white.
