Does English toffee have nuts?
Toffee in Britain is made with brown sugar, whereas buttercrunch is made with white granulated sugar. The differences do not stop there, however, since the delectable buttercrunch is usually made with a nice variety of nuts and other flavorings. Traditional British toffee, on the other hand, is not made with nuts.

Once toffee has reached 285 degrees and is amber in color, carefully spread it over the parchment paper using a spatula. Try to spread it as evenly as possible, as this will effect the thickness of the toffee once it has cooled.

I wouldn't make caramel in a non-stick pan because the high temperatures ruin the non-stick coating and can release toxins into the food. For the same reason, I never sear anything in a non-stick pan or cook anything above medium-high heat. I do all my candy-making in stainless steel pots and have never had any issues.

Parchment is super-strong, even when wet. Parchment is made by running sheets of paper through a sulfuric acid bath, a-process that makes the paper strong even when it gets wet or hot. The surface of parchment, also called sulfurized paper, is hard, smooth, and impermeable so it won't soak up grease or moisture.
