Why do you only use the white part of leeks?
Many recipes for leek soup call for just the white part of the leek, probably to keep the soup a paler colour, but the greens have just as much, if not more, flavour, and colour the soup a brilliant light green.

How long do Leeks take to grow from seedlings?
Leeks take 100–140 days to fully mature. They should be left in the ground and picked the day you plan to eat them, but remember their quality starts to deteriorate at flowering stage. Start harvesting when stems are 2cm thick, 12–14 weeks after planting.
How do you know when leeks are ready?
When to Harvest Leeks Most leeks mature 100 to 120 days after sowing the seeds, but a few varieties mature in as few as 60 days. Begin the harvest when the stalks are about an inch (2.
Do leeks transplant well?
Transplanting Leeks Before transplanting your young leeks make sure you've acclimatized them to outdoor conditions by leaving them outside for increasingly longer periods over the course of one to two weeks. They're ready to transplant when they are six to eight inches (15-20cm) tall.
