What is veal oxtail?
Veal oxtail is the tenderer, more delicately flavored counterpart to mature oxtail. With just a hint of beefiness, the tails of veal are subtler and sweeter.
Why are oxtails so good?
It used to be cheap until stores caught on that people liked them. Then the price went up because of the extra fat and gelatin and they produce an incredibly rich stock or stew; and the meat when stewed, has a better texture than most beef. If you have trouble finding oxtails, try your local butcher.
Can you eat milking cows?
If eating the meat of dairy cows seems like an obvious and economical old-world custom, one merely lost in the rise of quick-to-market factory farming of America, it's surprisingly not. Even in Europe, eating the meat from dairy cows, which typically have less meat on them, is rare.
Do cows make milk without babies?
Like humans, cows only produce milk after they have given birth, and dairy cows must give birth to one calf per year in order to continue producing milk.
Why are bulls not used for meat?
Normally we don't eat bulls because they have such high testosterone their meat is lean and tough. Old mamas and bulls are ground into glue or cat food.
Does a bull taste different than a steer?
A consumer panel of 606 assessors showed that bull beef was not as pale as steer beef and found no difference in fatness of the cuts, flavour or juiciness. Fore-rib roasts of bull beef were marginally less tender than steer fore rib.
