How do you arrange charcoal for a smoker?
The most useful way to set up your charcoal grill for smoking is to create a two-zone fire. That simply means you arrange the coals on one side of the charcoal grate and leave the other side empty, giving yourself two heat zones. One will have direct heat and the other will have indirect heat.

How do I control the heat in my smoker?
If your temperature is above 250°F, close down the vents to reduce the amount of oxygen in order to reduce the temperature. If your temperature dips below 225°F, open up the vents fully to allow more oxygen in to increase the temperature. Learn more about temperature control.
How do you make an offset smoker hotter?
You control the heat and smoke flow in an offset smoker—in theory, at least—by adjusting the air intake and exhaust vents. (Open vents mean more oxygen, which produces a hotter fire.) In practice, temperatures vary inside the cook chamber, with the end nearest the firebox being the hottest.
What does a baffle do in a smoker?
In simple terms, the baffle will absorb heat, lower the cooking temperature, and then it diffuses it back to all parts of the chamber. One of the technological features of baffle plates is called “reverse flow.” In short, the baffle plate diffuses heat evenly to allow for precise smoking.
