How do you defrost homemade pastry?
To thaw at room temperature, remove pastry sheet(s) from the box and outer wrapping. Thaw pastry sheet(s) until the pastry unfolds easily, no more than 40 minutes. To thaw in the microwave, remove 1 pastry sheet from the box and outer wrapping and wrap in a paper towel. Microwave on HIGH for 15 seconds.

A baked pie can be frozen for 6 months, a longer freezing time than an unbaked pie. Loss of quality increases with the length of time in the freezer. Pies can be frozen longer than recommended here but the quality greatly deteriorates with the extended freezer time.
How do you freeze an unbaked fruit pie?
To freeze an unbaked pie, wrap pie tightly or place in a plastic freezer bag (as you would a baked pie). Don't cut slits in the top crust. Unbaked fruit pies will keep in the freezer up to 3 months. When you're ready to bake, unwrap and carefully cut slits in the still-frozen top crust.

If a pie contains eggs or dairy products, it should be stored in the refrigerator and not left out at room temperature for more than two hours. Pies that do not contain dairy products, such as fruit pies can be stored, loosely covered at room temperature for up to two days.
How long in advance can you make a pie?
If you'd rather avoid the freezer all together and simply bake a fruit-based pie a few days in advance, it can keep, loosely covered, for up to two days at room temperature, or up to four days in the fridge. Again, 10 to 15 minutes in a 375°F oven before serving will help re-crisp the crust and warm up the fruit.
