Should I dry brine Wagyu?
Wagyu beef gets its flavor and tenderness from it's high fat content (that's the marbling you're seeing). I wouldn't brine (wet or dry) any steak, personally, but Wagyu in particular won't need it. Dry brining will not add anything to the steak, but might actually distract you from the flavor of the beef.
Should I dry brine picanha?
Yes. If leaving the picanha whole to cook it, dry-brining even overnight would yield great results. When we salt the meat ahead of time, you will at first notice liquid being pulled out of the meat and the surface will be wet. Over time, that solution will be reabsorbed back into the meat taking salt with it.

Frozen rendered fat seems to last indefinitely, as far as I can tell. I keep rendered tallow and lard in the pantry, not only unfrozen but unrefrigerated, for as long as six to twelve months and have been doing this for years.
