How do you brine oxtail?
Pour the water into a deep container and stir in the Aleppo pepper, if using, salt, and brown sugar. Once the salt dissolves, stir in the toasted peppercorns, coriander and mustard seeds, garlic, thyme, and lemon zest. Submerge the oxtails in the brine and cover the container.
