How do I make sure angel food cake doesn't stick to the pan?
Take a thin, flexible knife – a boning or filet knife works nicely – and run it around both the center tube and the outer edge of the cake pan. Use the tube to pull the cake out of the pan. Place the cake on an inverted baking pan. Cut the bottom free.
What makes a good angel food cake pan?
Angel food cake pans also have straight sides to encourage a fluffy high rise. Angel food cake should be cooled upside down to prevent a sad, dare I say tragic, collapse of your cake. Many angel food cake pans have "legs" to make the upside side down cooling step easier.
How do you cool angel food cake upside down?
Remove from the oven, then cool the cake completely upside-down set on a wire rack, about 3 hours. (Upside-down so the bottom of the tube pan is right-side up, see photo and video above.) Once cooled, run a thin knife around the edges and gently tap the pan on the counter until the cake releases.
Can an angel food cake be baked in a regular pan?
Use an ungreased 9×5 loaf pan. Contrary to what you've been taught, do not grease the pan and do not line it with parchment paper. In order for angel food cake to bake properly, you need it to stick to the pan. This ensures the cake rises and won't fall out of the pan when cooling upside-down.
