Should you cook Boston butt fat side up or down?
There is no right or wrong way to cook a pork butt. Cooking it fat side up will make the meat juicier, while fat side down will enhance the bark's flavor. You may find you prefer how it cooks one way and not the other.
Do you smoke pork shoulder fat side up or down?
Step 2 - Pork shoulders have a half-inch or so thick fat cap. You can put the shoulder in the smoker fat side up or down, I've had good results with either way of doing it. However in general you want the fat side up so the juices baste the meat while cooking.
Can you over smoke a pork shoulder?
Yes you can over cook a pork shoulder or butt, brisket, roast etc. It is possible to run the gamut and over cook or over smoke food leaving a perfectly good piece of meat totally dried out or burned.

What is the best temperature to smoke a pork shoulder?
You're looking for your pork shoulder to be about 200 F degrees. 195-205 F degrees is a good range for making amazing pulled pork! Remove pork from smoker and let rest for at least 20 minutes, but up to 2 hours.
How do you make pulled pork fall apart?
TIP- They way we do it is Put it in oven at 190 F overnight and then middle of meat 190F when we wake up, but to add a little additional time (and make sure it is fall-apart-tender, we usually leave it in the oven at 225 F until lunch or dinner the next day). Take it out and unwrap it.
Can you let a pork shoulder rest overnight?
After pulling rest for a hour on the counter than let them cool in a sheet pan in the fridge uncovered overnite. Holding them in a cooler for 8-9 hrs would IMO cause alot of carryover heat which could dry out and toughen your butts if you cooked till tender.
How long can you hold pork shoulder in cooler?
Can I pull pork the next day?
Cooking “too much” pulled pork is easy, especially given that “too much pulled pork” isn't even really a thing. Reheating pulled pork the next day, however, is a little harder and can often result in a disappointing dried out mess if not done correctly.
How long should you wait to pull pork?
For a butt I usually go a minimum of 45 minutes, but I prefer an hour to an hour and a half. For a bone in butt pull it off your cooker when the blade bone releases from the meat easily. 200* temp isn't necessarily what you need to look for alone, but it's a good ballpark figure.
