How long should I boil 20 eggs?
Fill pot with water to completely cover the eggs at least 1 inch above eggs and turn heat to high. Bring water to a boil, takes approximately 15 minutes. As soon as eggs start to boil, let boil for 10-12 minutes (I do 11 minutes). Set timer to help.
Why are my hard-boiled eggs mushy?
If the protein level drops, it might make it harder to set and stay runny. Egg white proteins go through a phase change (become hard) at a lower temperature than the Yolk by a few degrees, that's how you can have soft-boiled eggs.

Why did my egg crack while boiling?
The bottom, rounded end of an egg contains a small air bubble. As the egg heats up, the air inside the bubble expands. As the hot air pushes outwards, it puts pressure onto the shell, making it crack.
Can I leave hard-boiled eggs out overnight?
"Hard-boiled eggs should be refrigerated within two hours of cooking and discarded if left out for more than two hours at room temperature," said Rubin. Her recommendation is to leave them in the fridge in their shells for optimal taste and quality, and to only peel them when you're within minutes of eating them.
