Why is tuna shiny?
What causes the shiny, rainbowlike appearance on raw tuna and beef? The rainbow effect is caused by the reflection of light off muscle fibers, technically known as double refraction or birefringence. Why is tuna Green?
Greening was generated when tuna myoglobin was reacted with other muscle components including trimethylamine oxide (TMAO) and cysteine. After heating, a single type of green pigment was formed and resulted in discoloration of cooked tuna meat.
What is green tuna?
Green tuna fruit has the texture of an over-ripe watermelon, but not quite as sweet. There are ton of seeds that are said to be edible. In fact, they have a saying in Mexico “las gallinas comen piedritas, los mexicanos comen tunas.” Translated, it means, hens eat little rocks [for their digestion], Mexicans eat tunas.”
What does good tuna look like?
#1 grade tuna should have bright red, shiny and translucent. The core and tail sample should have this color. The bloodline from the samples should be darker red than the meat. It should not be black or brown.
