Can you dehydrate shredded zucchini?
Shred the zucchini or squash and spread out on dehydrator trays that are lined. I have an Excalibur dehydrator and I put the Paraflexx liners on — you can also line with parchment paper. Dry at 115 degrees Fahrenheit until the shreds are totally dried out and crunchy, about 12 hours or overnight, give or take.

Fortunately, zucchini and other summer squash are among the easiest vegetables to dry in a dehydrator—and dehydrated zucchini and squash will stay tasty and fresh for recipes all year long.
What's the best way to preserve zucchini?
Blot the zucchini dry with a paper towel and place on a baking sheet and place in the freezer. Freeze the zucchini for 1-2 hours. Once they're frozen, transfer them to a freezer safe storage bag and freeze for several months.
Can you eat Hollow zucchini?
When your zucchini fruit is hollow, they're weird looking but safe to eat (although hollow fruits may be hard to get rid of).
How do you make zucchini not bitter?
I learned a nice tip from a Sri Lankan friend which seems to make them taste less bitter:
- Chop off the stem end of the courgette with a sharp knife (not serrated)
- Press the stub / courgette surfaces back together and rotate the stub end against the courgette continually for a couple of minutes.
