What kind of milk is ricotta?
Ricotta can technically be made from the milk of cows, sheep, goats, or water buffalo, but the ricotta that we consume most frequently—the stuff you can buy at almost every grocery store—is made from the milk of a cow. But historically, that cows milk was used for something else before it was used to make ricotta.
Why is my ricotta cheese grainy?
Ricotta is produced by coagulation of the proteins in the serum left off once cheese has been produced. This coagulation creates little blob of proteins which get strained. After straining, ricotta is rested so that some of the liquid drips away: the more liquid is retained, the more grainy is ricotta.
