Serve it with garlic bread, mashed potato, salad – the world's your (vegetarian) oyster. As long as you end up with an amazing bowlful of creamy three bean stew, you've done well.
How do you fix a runny Toum?
Add more water a few drops at a time, stopping when the toum is thick and holds together like a fluffy mayonnaise, or you have a texture that you like.
Why my garlic sauce is runny?
If you add oil too quickly the sauce will break resulting in runny sauce. Adding three cups of oil into an allioli should take at least 15 minutes. You're supposed to emulsify the garlic with the oil. I'd probably roast the garlic first to protect my friends.
Why is my Toum liquidy?
You've probably broken your emulsion. Best bet is to start making a new batch, and once you've got a good emulsion going alternate adding oil and your broken toum.
What do you eat with Toum?
Toum's aggressive flavor is best paired with ingredients that can compete—grilled meats are the obvious choice, but the sauce can be mashed into charred eggplant to make a dip or drizzled over roasted vegetables. Anything that needs a hit of garlic and acid will be better with toum.
How long does Toum last?
3-4 months
Can you take too much garlic?
Garlic has been used safely in research for up to 7 years. When taken by mouth, garlic can cause bad breath, a burning sensation in the mouth or stomach, heartburn, gas, nausea, vomiting, body odor, and diarrhea. These side effects are often worse with raw garlic. Garlic may also increase the risk of bleeding.
