Is it better to boil or steam lobsters?
For recipes that call for fully cooked and picked lobster meat boiling is the best approach. In contrast, steaming is more gentle, yielding slightly more tender meat. It preserves a little more flavor and it's more forgiving on the timing front. It's harder to overcook a steamed lobster.

How long do clothes steamers last?
Most steamers take two minutes or lesser to heat up and produce steam but how long the steam will last depends on the product and size of the water tank. Handheld steamers produce steam that lasts for 10-15 minutes while upright steamers produce steam that lasts for about 45-90 minutes.
How do you store steamers overnight?
Keep them that way by storing them properly. Never store them in plastic: They'll suffocate. (That's why most come in a mesh bag.) Instead, place them in a colander set over a shallow dish, cover with a damp towel, and store in the coldest part of your fridge.
How do you know if steamers are bad?
Gently tap any open clams on the counter and see if they close. If they remain open, discard. If using soft shell clams (which won't fully close), tap or touch the side of the shell and/or siphon to check for movement. If the clam doesn't respond to the stimulus, it has perished and should be discarded.
Are steamers in season?
Peak harvest for steamers runs May through October, which is why many associate the season with the time of year they are in abundance. However, there is no 'season'—the harvest is year-round.
What time of year are clams in season?
Clams are available year-round for farmers. Wild varieties are available from October through June. There are a wide variety of clams available on the West Coast including razor clams and geoducks. See state-specific fish regulations if you plan to harvest your own.

Are steamers and littlenecks the same thing?
Further confusing things, Pacific littlenecks are sometimes called steamer clams on the west coast; they take longer to cook than Mercenaria mercenaria, but otherwise can be prepared in the same ways.
What do you soak steamers in?
Since steamers are raked from sand and mud flats, you will find some sand. A brine soak helps clams rid themselves of sand and grit before they're cooked. Soak clams in a solution of 1/3 cup of salt in 1 gallon of water (just to cover) for about an hour in the refrigerator.
What do Steamers taste like?
They have a nice, salty taste. However, the saltiness is more of a salt-water-y kind of way. They have a fishy taste but it is not gross nor is it overpowering. Their texture is difficult to describe, but clams are chewy, and depending on how they are prepared, can come off as slightly rubbery.
Where do steamers come from?
Steamers: These plump, soft-shelled beauties are native to the Northeast, and they pick up their nickname from the way they're most frequently prepared—rinsed lightly of their grit, then softly steamed in salty water.
Can you eat steamer clams raw?
Clams are delicious as an appetizer or a main course, but eating them can be intimidating if you don't know how. The two most popular types of clam to eat are steamed soft-shell clams (otherwise called “steamers”) and hard-shell clams eaten raw.
Do you eat the neck of steamers?
Holding the clam by its black "neck," dip it several times in the clam broth. The "broth" is strictly for dipping, by the way, not for sipping. The dipping washes sand off the clam and imparts the tang of the sea.
How do you cook and eat steamers?
