What can we do with pumpkin water?
Reduce it, then combine with some chicken stock, herbs and mount your butter for a sauce for a meal? Use it in a drink like you mentioned, add sugar and spices with ice, apple cider too. Flavour risotto or pasta with it in place of water or stock.
How do you make pumpkin water?
After you oven roast and puree your pumpkin, you can scoop the puree into a cheesecloth bit by bit (I use a flour sack towel), and twist your puree bundle to let out the water. Or, you can put your puree in a towel or cheesecloth, over a strainer, then over a bowl for a few hours.

1) If you are going to can pumpkin, you must, must, must use a pressure canner--no exceptions. I know, pressure canning seems scarier than water bath canning, but it's absolutely vital since pumpkin is a low-acid food. And if you follow my pressure canning tutorial, it's easy peasy. (No explosions, either.)
Is there a pumpkin puree shortage?
The good news: The Great Pumpkin Shortage may be over. The bad news: It will be a while until solid-pack pumpkin again packs grocery stores. For the first time in months, local supermarkets are receiving limited amounts of the canned puree so vital to Thanksgiving feasts.
