Why does my chocolate mud cake crack?
An imbalance in the recipe. Too much flour or too little liquid such as milk or eggs, for example, will cause the batter to be thick and less 'flexible', and result in cracking on the surface as the cake bakes, as well as a heavy, dense texture.

A completely decorated cake will contract and expand during the freezing/thawing process, ruining some of your hard work. You can make the frosting ahead of time and refrigerate it for 1 day, but fresh frosting really does taste best. Freezing leftover frosted cake is completely fine, though.

How far in advance can I make mud cake?
They can be baked ahead and actually improve in taste and texture over a few days. I find this recipe reaches it's “sweet spot” at about day 3 or 4. So for a weekend party, I'll bake the cake on Tuesday or Wednesday. If you'd like to get ahead with the cake and bake it earlier and freeze the cake, you can do that too.

Why do cakes sink in middle?
The most common reason why cakes sink in the middle is that they're underbaked. If a cake isn't fully baked through, the center doesn't have a chance to set and it will sink. This creates a doughy, dense texture in the center of your cake layer.
