Is clarified butter better for seafood?
Use clarified butter to dip cooked seafood, like crab or shrimp. It is great for sautéing fish, cooking vegetables, or making hollandaise or other sauces. It's also perfect for delicious buttery popcorn.
Does clarified butter taste different?
In my opinion, clarified butter has another advantage over regular butter: intensified flavor. Because the clarifying process removes water, milk solids (and possibly other impurities), clarified butter tastes silkier, richer, and has a more intensely creamy, buttery taste.
What's the point of clarified butter?
The goal is to remove the water and strain out the solids (usually using a cheesecloth), thereby creating a richer and purer fat that's more shelf-stable, too. Clarified butter is intensely luscious, with a nutty, toasty aroma that breaks free from the heavy murkiness of the original product.
Why is ghee so delicious?
Ghee and clarified butter are very similar, but the way ghee is made generally produces a richer taste. Both are made by cooking butter and removing the milk solids and water, leaving only the pure butter fat. Ghee goes one step further, lightly cooking the pure butter to achieve a deeper, nuttier flavor.

Why does Ghee turn white?
While it's most likely safe to use that ghee, its taste is subpar, and it's better to throw it out. If it has started to turn white, that's caused by oxidation, and the reason is most likely that you forgot to close it tightly. Cut off the white part and then some, and use the remaining portion provided it's okay.
How can you tell fake ghee?
One of the simplest methods you can use to find the impurity of ghee is by heating a teaspoon of ghee in a vessel. If ghee melts immediately and turns dark brownish in colour, then it is pure ghee. If it takes time to melt and turns into light yellow in colour, then it is adulterated.

Continue to simmer the clarified butter until milk solids on the bottom are light amber in color, and the butterfat becomes a deep golden yellow color. The ghee should smell nutty when done. Time will vary depending on your stove.

Your heat was too high for too long. If you ever make brown butter you will realize those milk solids can go from a nice golden color to black fast. When making ghee you start at medium temperature and when the milk solids start turning brown, turn the temperature down to a med-low or a low until finished.
