How do you reduce the water in a sauce?
Reduction is performed by simmering or boiling a liquid such as a stock, fruit or vegetable juices, wine, vinegar, or a sauce until the desired concentration is reached by evaporation. This is done without a lid, enabling the vapor to escape from the mixture.
What to Do If sauce is not reducing?
The difference in a sauce that was reduced to one cup and a sauce that was reduced to one cup plus a few tablespoons will be very slight. Also, if you accidentally reduce the sauce more than you like, you can usually just add a little extra water or broth to dilute it again.
Can you reduce any sauce?
Select the ingredients you wish to reduce. Other reductions like gravy will require multiple ingredients such as salt, spices, flour, and milk or water. There's no one right way to decide what ingredients you want to reduce. You can reduce any liquid you want in cooking.

Once the boiling begins, the liquid will go down (that's the reduction part), usually leaving a line of residue that circles the interior of your pot (see image of reduced tomato sauce). This is a good marker for you to tell if you are at your goal or if you should continue boiling.
How should you be storing a sauce?
Store in a small jar or bowl covered with plastic in the refrigerator or even in a heavy-gauge zip-top bag. A smaller container means less exposure to air and less spoilage. Gently reheat sauces to be served warm over low heat. Caramel and chocolate sauce are best heated in a double boiler over simmering water.

10 to 30 minutes
Does whipping cream thicken when heated?
If the cream is too warm, the fat becomes ineffective as a stabilizer, and your cream will fall flat. The cream may thicken, but even vigorous whipping will not make it attain lofty heights and a fluffy texture.
