Why did my lemon bars sink?
Usually, this happens either when there is a big space between the crust and the sides of the pan and/or the crust is cooled down too much before you add the filling. The hot crust and pan help to quickly cool the filling on top of the crust and sides to prevent it from sinking below the crust.
How long are lemon bars good for in the fridge?
1 week
Why did my lemon bars burn?
A lot of butter around the edges makes the sides darken and almost burn by the time you're done baking. As a result, I recommend trimming the sides. It's not a big issue but I leave you to decide if it's worth it. You might want to just lightly grease the pan and leave it at that.
How do you tell if lemon bars are done baking?
If you look at your bars after the recommended bake time, and the filling looks loose, runny, or too liquid, give them more time. You'll know your lemon bars are done when the edges are starting to turn golden, and the filling is set and no longer wobbly in the center.
Why do lemon bars taste metallic?
The high acidity content of the lemon can cause the metal to leach into the lemon curd resulting in a “metallic” flavor.
Is a sunken cake OK to eat?
Remember that the only part of the cake that isn't cooked is the sunken bit; the rest is perfectly fine. Here's what to do: Cut out the middle of the cake using a chef's ring or cookie cutter that is slightly bigger than the sunken part of the cake.
