Why did my smoked turkey turn black?
Smoked turkey can get dark quick because of the smoke. ^ +1 Smoke will darken the turkey as well drippings. The type of wood can also directly effect the color of your turkey. Cherry will give you a mahogany color, hickory, mesquite, and pecan will be dark.
Why can't I get my smoker hot enough?
Adjust your intake vent to a more closed position. This will let less oxygen in to heat up your smoker, causing the temperature to rise at a much slower rate. Feel like your smoker just isn't hot enough? First, ensure you still have enough charcoal in your fire box.

As a rule of thumb, it is best to leave the vent fully open while you are applying smoke to your meat. By leaving the vent completely open, you avoid the risk of creosote building up on your meat.

Controlling the airflow across the charcoal will control the temp. The firebox doesn't need to be full, and because your grill is not very well insulated you will likely need to add charcoal during the cook. I think your problem was that you had too much charcoal in the firebox and you were not getting good airflow.
