Why can I never find heavy cream?
In the US whipping cream is required by regulation to have a minimum of 30% butterfat. It can have more. Heavy cream must have a minimum of 36% butterfat, and can have up to 40%. There is something called manufacturers cream with higher butterfat content, but it is generally only available to industry.

The best way to keep it is by placing a fine-mesh strainer over a bowl and placing the cream on the strainer. That way, any liquid will leak into the bowl underneath.
