Why do my leftover mashed potatoes taste sour?
Never leave mashed potatoes on the counter overnight, especially if you've added any dairy products to them. This is is because bacteria and mold can and will develop fairly quickly, and your meal might just turn a little sour if the room is especially warm.
Why does my potato taste sour?
When exposed to light, potatoes manufacture increasing amounts of chlorophyll as well as two bitter-tasting alkaloid compounds, solanine and chaconine. In high concentrations, these can not only make potatoes taste bitter but also can cause headaches and stomachaches.
Can potatoes go sour?
Just store them raw, no need to cook them first. If your potatoes shrink or become mushy along with smelling sour, it means that they've spoilt.
Are sour potatoes bad?
Do not eat potatoes that taste bitter or cause a burning sensation in the mouth.
Do oxidized potatoes taste different?
This process, which is called oxidation, happens because potatoes are a naturally starchy vegetable. And when exposed to oxygen, starches turn gray, brown, or even black. An oxidized potato is completely safe to eat, the process doesn't affect the flavor or texture of the vegetable.
What happens if you eat solanine?
Ingestion of solanine in moderate amounts can cause death. One study suggests that doses of 2 to 5 mg/kg of body weight can cause toxic symptoms, and doses of 3 to 6 mg/kg of body weight can be fatal.
