Does lime cook raw fish?
The acid from the limes and lemons change the structure of the proteins in the fish, essentially "cooking" the fish without using heat.
Can you overcook fish in lime juice?
Believe it or not, you can actually overcook your fish with lime juice! Leaving it too long will not only make it tough and dry, but it will also break down the connective tissue, causing your fish to fall apart (more on this from The Food Lab).
What happens when you cook lime juice?
When lemon juice is boiled, it reduces, which means that water evaporates. This concentrates the flavor. This concentration and cooking also changes the flavor. The now cooked juice, while still clearly identifiable as lemon, will be much less bright.
When should I use lime juice?
Lime juice can be used in place of lemon juice in most recipes but because their acidic level is higher they will provide a slightly sharper taste. Limes can be used to enhance the flavor of many dishes. It can be added to both sweet and savory dishes to provide a fresh flavor.
Should you cook lime juice?
Fresh, just-squeezed lemon or lime juice does wonders for a pan sauce. But if you've ever added it to a sauce too early, you know how funky it tastes when it cooks. Avoid discoloration and a bitter flavor by only adding the juice after you remove the sauce (or stew, or soup, or whatever) from the heat.
