Can you steam brussel sprouts then roast them?
Roasted Brussels sprouts is a combination of steaming and roasting. Once the sprouts are steamed (see above), put them in a large ovenproof skillet with ΒΌ cup of virgin olive oil added and put them in the oven. Roast for about 30 minutes occasionally shaking the pan until the sprouts are brown and tender.
Is it better to steam or roast brussel sprouts?
Most people shred them up and toss them into salads, but I think the best way to maximize the flavor potential of these veggies is to combine the steaming and roasting cooking methods. Roasting creates a high heat environment that quickly generates new flavors and colors on the sprouts due to caramelization.

Yes you can freeze Brussels sprouts without blanching first. For years, I blanched mine then a friend who had an allotment gave me a glut of Brussels and told me just to wash and dry and then bag. They are better when cooked and taste good.

You can freeze either Brussels sprouts that you grow yourself or that you happen to buy a large batch in the store. That said, it is especially worthwhile to freeze when you have homegrown or locally-raised fresh sprouts to preserve their freshness.

What does a bad brussel sprout look like?
The best way to determine if your brussels sprouts are beyond an eat by date is to follow your nose. An old brussels sprout will smell rather harsh, sort of like old cabbage. The smell gets stronger as it ages as does the taste. Older sprouts lose any sweetness and taste rather sour.
